Recipes: Claytonia Sauce

A seasoned Winter CSA shareholder correctly predicted it is the weeks of the season for a steady supply of claytonia a.k.a. Miner's Salad.  She shared this recipe for claytonia she invented and has had success with in her kithcen.  (I'll mention again that claytonia is amazingly high in vitamin C, so it's also the perfect time of year for a dose of it with regards to keeping the immune system healthy!)  Thanks Adela!  Enjoy!


Claytonia Sauce Recipe

The tangy taste of claytonia makes it perfect for this bright green sauce:

Ingredients:

1 bag Brines Farm CSA claytonia, washed and spinned dry
2 tablespoons plain yogurt
2 tablespoons olive oil
juice of 1/2 lemon
salt and pepper to taste

Directions:

Combine all ingredients in food processor and process for 1-2 minutes until completely pureed and bright green

This sauce is fabulous (and very pretty) on a nice pink piece of salmon,  on roast sweet potatoes, or as a dip.  Especially when thinned down with a little extra olive oil or yogurt, it makes a great salad dressing too.
